EVOO

Early harvest Extra Virgin Olive Oil,

The La Cantona is a gourmet product from our firm “La Cantona, Aceite de Oliva Tradicional”. It is an EVOO obtained from early harvested Picual olives cultivated on our own property, Cortijo Maroto, and collected in the second half of October.

At this time the fruit is still green and the oil yield is low. However, the aroma and taste become more intense and complex, full of hints of herb, vegetable and fruit. Also, the anti-oxidant content is much higher, which increases its healthy properties and its resistance to oxidizing agents, such as light or heat.

La Cantona is available in 250ml and 1 litre tins; 100ml, and 500ml glass bottles and 3 litre Baginbox.

Collection and extraction

The olives are collected from the tree only, with great care so as not to damage the fruit which is taken directly to the mill at the end of the working day. There it is immediately cold pressed using the most advanced technology, to maintain unaltered all the properties of this top quality olive oil.

EVOO of Jaén

La Cantona comes from the locality of Marmolejo, in the area of the Campiña de Jaén, in Andalucía, This region of Spain is recognized as the main producer of olive oil in the world.  The production of Jaen province by itself represents 20% of the world total.

Recommendation for use

It is recommended that it is used cold, as a dressing or seasoning for all types of dishes. Ideal on toast, as a dressing for salads, vegetables; on grilled or steamed fish as well as barbecued meats, it can equally be used for making marinades, pickles and cold sauces.

For those who have to follow a diet low in animal fats, EVOO can be used in place of butter in the making of biscuits, muffins and many other desserts and sweets.
